I've seen several modes for Audio like DTS, AC3, WMA Pro, etc, and two options: Digital and Analog.

DTS is for example on digital
while AC3, and the others are in analog

For what are this two options (analog/digital)?

DTS requiresd a license for downmix to analog, that's why only digital option is there since the iSTAR does not have the license. The other options can be set to Analog or Digital to select whether you want to pass it on to the reciver or to the TV; TV usually cannot decode these formats but a receiver can...

Hence why both are available so it matches your situation with or without receiver.

I have a receiver, then is better to adapt them all to Digital?

By the way, I'm passing the signal with optical cable the receiver, thats why I though I should put them all to digital.

Thing is when I set up this config to digital I hear a strange echo on the voices of the films... I'm using a Receiver with a 6.1 audio outputs and downloading mainly mkvs with audio AC3...

If you get any audio at all you've chosen the right type of connection. Any echoing sound you might get is purely a matter of setting up your reciever correctly. You probably have some sort of "Hall" or "Stadium" sound effect enabled on it.
